Top Tips For Grilling Game Meat

Summer is officially here and with July 4th right around the corner we wanted to share some of our best tips and tricks for succesfully grilling and BBq'ing your game meat!


  • Choose the right cut of meat. Some cuts of game meat are going to be better suited for BBQ than others. Venison steaks and chops are much more palatable when cooked to medium-rare, while tougher cuts like venison roasts can be cooked to medium or even well-done.

  • DON'T Trim the fat. Game meat is typically leaner than domestic meat, so it's important to leave any excess fat before cooking. This will help to prevent the meat from drying out and give it a juicier and more flavorful result.

  • Marinate the meat. Marinating the meat will help to add flavor and tenderize it. There are many different marinade recipes available, but a simple mixture of olive oil, salt, pepper, garlic and some of your other favorite herbs will do the trick.

  • Cook over medium heat. Game meat should be cooked over medium heat to prevent it from drying out. If you're using a charcoal grill, build a two-zone fire with the coals on one side and the meat on the other. This will allow you to sear the meat on the hot side and then cook it slowly over the cooler side.

  • Use a meat thermometer. The best way to ensure that your game meat is cooked to perfection is to use a meat thermometer. Whole cuts like steaks or roast you will want to cook to a minimum internal temperature of 145 F (medium rare). For ground venison you will want to cook to an internal temp of 160 degress F. Before to check the proper temps for whatever type of game meat you are cooking to avoid


Here are some additional tips for BBQing game meat:

  • Use a wood fire for extra flavor.

  • Baste the meat with your favorite barbecue sauce or marinade.

  • Serve with grilled vegetables or a salad.

Here are a few easy recipes for BBQing game meat:

  • Venison Steaks: Marinate the steaks in a mixture of olive oil, soy sauce, Worcestershire sauce, garlic, and herbs for at least 30 minutes. Grill the steaks over medium heat for 3-4 minutes per side, or until they reach the desired internal temperature.

  • Grilled Quail: Season the quail with salt, pepper, and your favorite herbs. Grill the quail over medium heat for 5-7 minutes per side, or until they are cooked through.

  • Grilled Rabbit: Marinate the rabbit in a mixture of olive oil, lemon juice, garlic, and herbs for at least 30 minutes. Grill the rabbit over medium heat for 5-7 minutes per side, or until it is cooked through.
